The pre-pressing unit centralizes post-thermal-treatment mass handling. Curd is evenly distributed over the drainage table where initial whey separation occurs through perforated surfaces and a lower drainage channel. Through mobile bridges and pneumatic cylinders, controlled pre-pressing is applied to compact the mass structure. Subsequently, the system allows exact dimensional cutting through pneumatic blades and executes the final pressing in molds under programmable recipes, eliminating operational variability.
