The equipment receives the hot mass directly from the stretcher in a buffer hopper equipped with four screw conveyors, immediately releasing the cooking equipment and ensuring constant feeding. The pasta is driven through a double-wall extrusion chamber that maintains optimal plasticity temperature. The key to the process lies in synchronization: belt speed is regulated against extrusion capacity to generate controlled traction that aligns the fibers, achieving the desired chicken-breast effect. A closed cold water circuit sets the shape before a timed cutter performs the cut to the programmed length.

•Texture and Fiber Development (Chicken-Breast Effect): The system allows adjusting the speed ratio between extrusion and conveyor belt. This controlled mechanical traction stretches the pasta as it exits the head, creating the fiber alignment typical of high-quality Oaxaca cheese, impossible to achieve with conventional simple-pressure extruders.

•Dual Thermal Management: Combines a heated extrusion chamber (double wall) to prevent premature dough cooling, with an active cooling system on the conveyor belt using a sanitary centrifugal pump and cold water recirculation. This ensures the cheese is cut and reaches the collection tank with adequate consistency for ball-forming or packaging.

•Format Versatility (Interchangeability): Extrusion heads are interchangeable, allowing production of various geometries (rectangular, oblong, cylindrical) or flat sheets designed specifically for subsequent processing in mechanized shredding equipment.

•Control and Automation: Centralized operation via AISI 304 stainless steel panel (IP65) with HMI touch interface. Includes frequency drives for precise transmission control and timers for the automatic cutting system, eliminating manual cutting variability.
