This line receives the hot product directly from the molder. Through a basket system with forward motion (or double motion with pause for greater exposure), the cheese is submerged in cold brine. Direct contact with the fluid at low temperature guarantees efficient thermal transfer that hardens the surface and rapidly lowers the core temperature. At the end of the line, a sanitary polyethylene elevator belt automatically extracts the product, eliminating manual handling and delivering the cheese ready for the next stage.
