Frautech debacterizers operate at temperatures between 55 and 60°C, separating microorganisms and spores denser than milk. Concentrated bacteria accumulate at the periphery and are discharged periodically or recirculated for higher concentration. This process is crucial for producing soft and semi-hard cheeses to prevent acid fermentation and late swelling, which can compromise product marketability.
