The Yogurt Production Module is an integrated processing solution designed to manage the complete yogurt manufacturing cycle, from pasteurized milk base to textured product ready for filling. The module is engineered to preserve the yogurt's natural viscosity by minimizing mechanical handling and pumping the product only once throughout the process.
The process begins with a plate type HTST pasteurization skid, which heats the standardized milk base and delivers it at the precise temperature required for culture inoculation. The pasteurized milk then flows directly into maturation tanks, where the acidification curve is tightly controlled and static cooling is applied to stabilize fermentation and structure development without disturbing the yogurt gel.
In the final stage, an in line mixing skid gently extracts yogurt and fruit preparations using progressive cavity (eccentric screw) pumps, selected for their low shear characteristics. The components are combined in a static mixer and texturizer installed immediately upstream of the filler, ensuring homogeneous fruit distribution and stable rheological properties while preserving the integrity of the yogurt matrix.
By integrating all critical operations into a unified process architecture, the module minimizes transfer losses, eliminates operational bottlenecks, and guarantees a stable, repeatable texture from milk to final packaging. Centralized thermal management and instrumentation enable continuous monitoring of pasteurization temperature, maturation pH, and fruit dosing ratio from a single control point, ensuring full traceability and batch to batch repeatability.
